Brownie Recipe

Ingredients (makes 16 brownies):
185g of unsalted butter
185g of dark chocolate
85g of plain flour
40g of cocoa powder
50g of white chocolate
50g of milk chocolate
3 large eggs
275g of golden caster sugar

Method:
1. Cut the 185g of unsalted butter into small cubes and put into a medium bowl. Break 185g of dark chocolate into small pieces and place into the same bowl.
2. Melt the chocolate and butter by filling a small saucepan around a quarter full with hot water, put the bowl on top so it sits on top of the saucepan, but not touching the water. Put it over a low heat until both the butter and chocolate have melted. Remove the bowl from the pan. Alternatively, a microwave could be used by covering the bowl loosely with clingfilm and leave for two minutes on a high temperature. Leave the melted mixture to cool until it is at room temperature.
3. Turn the oven on to fan 160 degrees, conventional 180 degrees or gas mark
4. Using a shallow square tin, cut out a square of non-stick parchment paper and line the baking tin. Tip the 85g of plain flour and 40g of cocoa powder into a sieve held over a medium bowl and sieve until all the lumps are gone.
5. Chop 50g of the white and milk chocolate.
6. Break 3 large eggs into a large bowl and tip in the 275g of golden caster sugar. Whisk the eggs and sugar with an electric mixer on maximum speed. It should resemble the consistency of a milkshake and this may take 3-8 minutes. The mixture is ready when it becomes very pale and is double its original volume.
7. Pour the chocolate mixture over the egg mixture and gently fold together with a rubber spatula.
8. Hold the sieve over the bowl of the combined mixtures and resift the cocoa powder and flour mixture. Gently fold together and then add the chunks of milk and white chocolate and dot them evenly throughout the mixtures.
9. Pour the mixture into the prepared tin and cover the tin evenly with the brownie mixture. Put into the oven and set a timer for 25 minutes. If the brownie wobbles in the middle it is not done, so place back in the oven and bake for another 5 minutes.
10. Take out of the oven and leave to cool.
